Meal Plan and Shopping List – Week 1

It is the first week of January and Meal Plan Friday is well and truly underway!  Of course you can start at anytime but I’m all geared up as it is one of my 2018 goals – consistent meal planning. So what’s on the menu?

Weekly Meal Plan Fridays Feature - The Growing Mum

Monday

Lunch:  Brunch*
Dinner:  Chicken in a tomato stew** (sauce) with rice and mixed vegetables
Snacks: Banana, yoghurt, pear and hummus sandwich

Tuesday

Lunch: Vegetable pasta bake
Dinner: Fish pie
Snacks: Banana, blueberries, cheese biscuits and veggie sticks

Wednesday

Lunch: Chicken and rice with mixed veg (Monday’s dinner)
Dinner:  Spaghetti bolognese
Snacks: Grapes, pear, veggie sticks and cheese spread sandwich

Thursday

Lunch: Fish Pie (toddler); Tuna sandwich (adults)
Dinner: A freezer meal
Snacks:  Yoghurt, banana bread, raisins and grapes

Friday

Lunch: Spaghetti bolognese
Dinner: Tuna, rice and veggies (toddler); Date night meal (adults – could be takeaway)
Snacks: Grapes, blueberries and cheese biscuits

Saturday

Lunch: Brunch
Dinner: Vegetables noodles stir fry
Snacks:  Available options

Sunday

Lunch:  Sausage rolls
Dinner: Roast
Snacks:  Available options

* As it was New Year’s day, we treated ourselves to a cooked breakfast for brunch

** This is a Nigerian tomato-based stew – one of the few Nigerian dishes I remember how to cook and the husband likes too

Shopping List

Fruit and Vegetables

  • Banana
  • Blueberries

Meat/Fish

  • Chicken thighs (pack of 6 at least)

  • Yoghurts (toddler and adult)
  • Cheese spread
  • Cheese
  • Butter

Cupboard (Dry)

  • Tin tomatoes (6)
  • Tomato paste
  • Baked beans
  • Flour
  • Chickpeas (4)
  • Tahini
  • Bread: sliced and rolls

That’s the meal plan for this week. We got a slow cooker for Christmas with a recipe book so some of the meals will be cooked in there. Other half is weirdly excited about it so I’ve left him in charge of the slow cooker meals (Fish pie & Bolognese). Some of the dinners are also lunches during the week so we double or triple the portions accordingly – especially if freezing too.
